As soon as the mud is dried (good at moment) I'll be reverting to my Nobby Nic up front and Racing Ralph out back :)

I'm more of a Maxxis Advantage fan as an all year round tyre, but loved Nobby Nics for the dry months.

There's no best xc tyres. It depends on the terrain, your bike, your style of riding, etc...Normally front tyre more grip and less pressure than rear. For the moment I'll stick to Mountain Kings II and for drier conditions I've got the Ralphs. Tons of tyres but I don't know much.

Often tyres come in different compounds, widths...

Are they fine for xc? I know they're good for downhill.

Yeah I'm a schwable guy aswell.
I've got hans dampf up front (2.4) and nobby nic on the rear (2.2) and I've used them all winter for all riding.
now its starting to dry up a bit, ill be putting my nic up front and got a racing ralph for the rear.

Yes they are fine for XC, might be a bit heavier than some of the others but more durable and not so prone to ripping the side walls out on rocks etc like some of the lighter tyres. I prefer to have a slightly heavier but stronger tyre under me for the extra confidence, especially on XC as its a mixture of terrains. If you want speed then a lighter tyre will be better but you might sacrifice durability and grip.

2.5 single ply minions or swampthings seem to cover most conditions for me. Might swap the minions out for high rollers if they do a single ply version.

Jon my high rollers are single ply but they are 2.35's and not sure if they do them in 2.5's.

I'm running some 'donated' high rollers from a friend who swapped to nobby nic's, he doesnt like the nobby nic's much at all, says he has little faith in them on the turns and wants to return to high rollers, just goes to show how different characteristics affect people differently !!
